Nutri Lush Lollies
This recipe is basically a deliciously creamy, energy and nutrient rich smoothie bowl recipe, which may also be eaten immediately as an energizing breakfast or a power-snack without the need to freeze.
1 banana, peeled (frozen or fresh)
1/4 cup of berries (or 1 apple/pear, peeled & chopped)
1 small raw beetroot, peeled & chopped (or a carrot)
1 leaf of kale or spinach, chopped (or a scoop of greens powder)
1 tsp vanilla
1/4 tsp ceylon cinnamon
1/4 tsp ground ginger
2 dessert spoons of coconut yogurt (or nut butter)
2 dessert spoons of desiccated coconut*
2 dessert spoons of ground flax seeds
1 scoop of protein powder or gelatin/collagen powder
Fill water up to the fill line
Blend all the ingredients together until it resembles a thick milkshake consistency. Then pour into frozen lolly moulds and freeze for 2 hours. To release from the moulds you may need to stand in room temperature water for a few minutes. Or take them with you straight from the freezer.
Variety is the spice of life! There are numerous options to mix-it-up or suit your taste or health needs, such as:

- Swap coconut yogurt for coconut butter
- Swap some or all of the water for almond or oat milk
- Add 1 tsp of Cacao, cocoa or Macca powder
- Swap out the desiccated coconut for any mix of:
- Seeds, pre-soaked for 8 hours to activate the enzymes and soften
- Nuts, pre-soaked for 8 hours to activate and soften.
